The characteristics of free radical are in bond electron, unstable, reactive and danger for health. They are potential for damaging macromolecule within the cell such as membrane cell lipid, DNA and protein. Physiologically, the cell itself is always to be in the homoestatic condition by producing antioxidant endogen to avoid the existing bad effect, if the amount of antioxidantr in the body is unbalance, emaning to say that is less than the free radicals, it causes oxidative stress. To prevent free radicals is by giving or consuming exogen antioxidantr such as vitamin C, E, carotene and licopen and flavonol compounds. Carotene is changed into vitamin A which is suitable in lipid and found in vegetable, fruit and animal protein. Carotene is easily oxidized, ebcause of its poly unsaturated structure which can prevent oxidation of the lipid membrane cell. The most active carotene is beta carotene which can be found in vegetable.
