This study examine dthe effect of the salting period and storage time of the salted egg before boiling to the keeping period of salted egg. Nine hundred duck eggs 1-3 aged days were wrapped with a mixture of 25% of salt, 30% of ash and 10% of red bricks and keep foe 7,14,21 days (as the main plot factor). the salted egg washed and dried and then boiled on 0,3,6,9 days after salting process(as subplot factor).
