In pork meat supply chain, slaughtering plant is one of the important supply chain stages. Live pigs with various sizes from fattening farms are daily supplied to slaughtering plant. The procured pigs are slaughtered into 7 primal cuts, which are ham, shoulder, collar, loin, tender loin, belly and rib. The size of each primal cut will be varied on its weight according to the sizes of the pig. Once a pig carcass is processed, all primal cuts are obtained. A product(i.e., specific meat cut) is processed from a specific primal cut, but it can be from many primal cut sizes. Different cut size will provide different product yield. Some products are co-products of each other. That is, when a product is produced, another product is also obtained. The primal cuts and products which are not on demand in that period have to be kept in temperature controlled storage. The product will be considered to be perished after a specific storing period. To avoid such inventory, an efficient production planning is required to maximize matching primal cuts to the customer orders. In this paper, the case of one of the largest pig slaughtering plants in Thailand is studied. A mathematical model is formulated to allocate primal cuts in various sizes to products in order to minimize total cost that consists of pig cost, trimming cost, storage cost, perished cost and cost of backlogged order. The model provides an optimal number of live pigs in each size that should be slaughtered daily and the allocation of their primal cuts to products based on customer demand.
