Product Development process is important step for all business and same as the bakery business. Product Development process have to integrate the efficiency sub process together such as searching the voice of customer (VOC), transferring the VOC to concept sheet of product, brainstorm for creative thinking, searching the new knowledge in science, product research and development from science knowledge, considering and selecting the initiative, testing the initiative and testing the market. All the processes above mentioned can be initialed various methods. Each method has the differential result of research about time efficiency and objective responding. For example, trial and error method spends more time than another method but the experimenter receives more the detail from experimental. On the other hand, the research build on the literature review which spend less time to research but the research may know the less detail in experiments. In this paper, CPRAM Co.,Ltd. apply the Data Mining tool in order to determine methodology and direction for research and develop that will help to reduce trailer and error time period, use the resource worthily and accurately for research, understand overview of all literature review for same or nearby business in the world and finally, business can be gain advantage over the competitor because the result from Data Mining can be indicated research trend in the future. As the result of the case study can be reduce research time 50%, reduce the useless cost in research 40%, plan the road map for research in short, medium and long term that create to integration of information in organization unidirectional and conform with business plan and finally, the result of research that is the key success factor of bakery business and the new product outclass competitor in innovation product level at least 2 categories in the last year
