Isi artikelIn field collection, naturally palm fresh fruit bunch (FFB) as crop were changed by the physiological process up at degradation of quality. The changed were respirasi decreased, oil content decreased, water content decreased, free fatty acid increased, caroten content increased, and DOBI (deterioration of bleachability index) increased. Respirasi and the increased of free fatty acid were existence indicator of fresh fruit bunch degradation in the filed (collection). The quality degradation process quickened by internal condition of fruit, microbe contaminated, mechanical damaged, humidity, irradiating and temperature. For quality control, yield transport and processing ought to be prepared soon.
