Abstract
Due to the ability to change color under different pH conditions, dragon fruit peel anthocyanins were incorporated into indicator film based on cassava starch-chitosan. This study aimed to prepare and evaluate the properties of a novel indicator film based on cassava starch-chitosan and anthocyanins from dragon fruit peel for monitoring fruit ripening. The film was produced through the casting method. Various characterizations of the indicator film were carried out, such as color change in various pH conditions, physical and mechanical properties, antioxidant activity, and its ability to change color during banana storage. The color of indicator film changed from pinkish-red to yellow under different pH 1-13. The incorporation of anthocyanins extracts significantly enhanced the antioxidant activity, moisture content, and thickness of the film. However, it reduced the transparency, tensile strength, and elongation at break of the film. The water vapor transmission rate was not different from the film without anthocyanins. The color change from pinkish-red to yellowish-pink can be observed after 3 days at room temperature in banana storage. In conclusion, cassava starch-chitosan and anthocyanins from dragon fruit peel film could be used as a novel colorimetric indicator film for monitoring fruit ripening.
