Abstract
Pregnant women need calcium and iron to prevent low birth weight and anemia. These nutrients need can be met from snacks, apart from main meals. Moringa oleifera leaf is one of the foodstuffs in Indonesia, which contains calcium and iron, but its use in a snack is still limited. The purpose of this study was to characterize the nutritional composition, physical properties, and organoleptic properties of sandwich cookies filled with Moringa oleifera leaf for pregnant women. A completely randomized design was used to compare the nutritional content, physical properties, and sensory liking among sandwich cookies filled with and without Moringa oleifera leaf, and commercial sandwich cookies. The results showed that the Moringa oleifera leaf sandwich cookies have similar nutritional content to commercial cookies. The color of the sandwich cookies filling fortified with Moringa oleifera leaf was different from commercial cookies filling. The addition of Moringa oleifera leaf (23%) into the filling of cookies increases the calcium (98,95%) content but decrease the iron content (23,97%). It also decreased of taste and aroma liking based on the result of acceptance test using 9-point hedonic scale. However, the pregnant women (n=50) still accepted the taste and aroma of Moringa oleifera leaf sandwich cookies which is neutral to like slightly (5-6). In conclusion, Moringa oleifera leaf sandwich cookies could be developed to fulfill the nutrient intake for pregnant women.
