There are 500.000 new cases of atherosclerosis and 125.000 died each year. Carrot is a vegetable that contains a high level of antioxidants, which can reduce inflammation factors.The aim of this study is to know the effects of carrot juice that is given orally against the intima thickness of aorta abdominal high-fat diet-fed Wistar rats Methods : An in vivo experimental design of 25 rats which were divided into 5 groups : group of normal diet, high fat diet, high fat diet with low dose fresh carrot juice, high fat diet with moderate dose fresh carrot juice, and high fat diet with high dose fresh carrot juice. After 35 days of intervention, aorta abdominal of the rat was taken and processed with HE staining. Intima thickness then measured with light microscope. Results : In 5 experiment groups, macroscopically there’s no abnormality in lumen or wall in aorta abdominal Wistar rats. Microscopically there’s no intima thickening in each histology slide. There’s cells which looked like foam cell, but it must be confirmed with another test. The absence of intima thickening making it impossible to assessed the effect of carrot juice and the most effective dose for preventing atherosclerosis. Conclusion : Orally fed pig fat 2 ml in 35 failed to make intima thickening in aorta abdominal Wistar rats microscopically, making it imposible to assess the effect of carrot juice to aorta abdominal high-fat diet-fed Wistar rats.
