Preparing students for career in the hospitality industry, particularly those who are working in the restaurant services require an ESP textbook that can meet the language skills needed by the workplaces. However, there is a mismatch between the content of ESP textbooks and the actual workplace language demand. To help teachers recognize and rectify the mismatch, this paper describe a three-step method to 1) collect data about the needs of employees, 2) use that data to evaluate the textbook used, and 3) supplement the ESP textbook to make it more relevant to the employment setting. By taking the students who have finished doing job training in the restaurant as the sample of this research, it was found that the ESP textbook should be revised both in the language skill and the language content to meet the students’ need in the workplace.
