Abstract
ß-carotene is a fat soluble compound. Longitudinal experimental study was to determine the effect of fat intake quantity of Indonesian society in general, ß-carotene supplementation on serum levels of ß-carotene. The study was conducted on seven non-academic employees of the Medical Faculty Atma Jaya Catholic University with four stages of treatment : The first phase, subjects received minimal fat intake without supplementation of ß-carotene. The second stage, third and fourth subjects treated ß-carotene supplementation with 63 mg of fat intake minimal, moderate and high. Long each stage of treatment is 5 days and the measurement of serum levels of ß-carotene was at 14th day. The results showed no significant differences in serum levels of ß-carotene in ß-carotene supplementation with fat intake of fat intake are minimal compared (p=1.00) or high (p =1.00). This study shows that supplementation of ß-carotene with minimal fat (4-18 g / day) sufficient increase levels of serum ß-carotene optimally.
