Research on tanning of chicken shank skin using pineapple waste exstracted as bating material and chrome as tanning agent was conducted. The result of this study showed that tensile strength and elasticity were bellow Indonesian Industry Standard (SI!, 1974). Flexibility was not optimum, chrome content was also bellow SI! (1974) and water content was higher than SI! (1974). Those condition was might be caused by imperfectly done of bating process due to low percentage of pineapple waste extracted used. It could be concluded that pineapple waste extracted of tO % was not enough for bating process in tanning of chicken shank skin using chrome. So that a research on tanning of chicken shank skin using pineapple waste exstracted more than 10% as bating material was needed.
