Chili (Capsicum sp) plays an important role as a horticultural commodity in Indonesia. It has good prospects to improve farmer;s incomen, high economic value and an industrial raw material that has potential to be exported and opern work opportunities. Good post Chilli harvests begins by planting, harvesting, after harvesting, packing, transporting, and processing of commodity. As a consequence, post chilli harvest improves added value of commodity, lowers missing or damaged harvest, improves storage endurance, supports food supply efforts and community nutrition, supllies raw material for industy and improves farmer's income. Efforts to preserve freshness of chilli quality can be done by slowing the speed of respiration by cooling and storing chilli in controlled atmospheric room temperature. Drying is also an important process in food industry. Processing chilli into other product forms such as half processed (milled) chili, sauce or condiments could help to preserve this commodity.
