Activities of post harvesting handling of marine fish products conducted by either fishermen or coastal community are mostly as small business at home industry scale with traditional technology such as salting, drying, smoking, and fermentation. These activities frequently give low added vales. Both handling and processing activities with relative moden technologies are rare. Even tough ecport activities increased ontinuosly, but primary products have not been dominated by processed products yet. Therefore, the added value of products, priority products have to created through application of marine fish in the processing industry. The development of priority products will not only supply domestic demands, but also it is expected to increase export value.
