The outer skin of Crustacea species such as shrimps and crabs contains chitin. It is material waste unusable and can be used as food preservation nature that is called chitosan as substitute formalin. The chitin is safety for health and environment. In the outer skin of shrimps contained chitin that is sakarrida mukopoli tied unorganic salt, especially Calsium Carbonat (CaCO3), protein and lipida included pigmen-pigmen. Therefore to obtain chitin from the outer skin of shrip must separate the protein and mineral. Even to obtain chitosan be advanced by processing deasetillization. Chitosan is the modification of chitin which function as antibacyeria and its ability to immobilize bacteria. This condition might cause chitosan is used to be food preservation nature. The ability to obstruct bacteria depend on chitosan concentration.
