Abstract
Bioactive peptides from goat milk was known as antioxidant activity that can act as active compounds to active packaging. This activity can extend the shelf life of packaged food products by prevent oxidation. This research aimed to utilize antioxidant peptides from Etawa crossbreed goat milk which has an antioxidant activity as an active ingredient for coatings and determine the antioxidant activity of the peptides coating to the apples slices. Goat milk hydrolyzed peptides using food grade papain enzymes for 15 and 30 minutes had the highest antioxidant activity. These peptides were added to the alginate based coating at concentrations of 0, 1, 3, and 5%. The coating antioxidant activities were analyzed with 2.2- diphenyl-1-picrylhydrazyl (DPPH). The coating was applied to the apple slices and the color change was measured with a colorimeter. The coating formula with 5% peptides hydrolyzed for 30 minutes has the highest antioxidant activity and retain the color of the apple slices.
