Abstract
This research aims to investigate the potency of Rhizopus microsporus ATH35 and R. delemar ATH53 in determining the quality of tempeh in terms of vitamin B12, antioxidant, flavour, and antibacterial activities. Tempeh was produced using R. microsporus ATH35, R. delemar ATH53 and producer’s “laru”. Tempeh R. microsporus and R. delemar show higher quality than tempeh produced from producer’s “laru”. Tempeh R. microsporus has the highest vitamin B12 concentration and is preferred by the panelists. Tempeh R. delemar has the highest antioxidant activity. Extract tempeh R. microsporus and R. delemar had activity against Bacillus cereus. In conclusion, the potency of R. microsporus ATH35 and R. delemar ATH53 in determining the quality of tempeh is different.
