This habit of using traditional ice blocks results inincreasing cost of operations for their everyday activites while recieving mediocreresults from ice blocks. Reusable tapioca ice substitute is one of the solution toreplace the usage of ice blocks. This ice substitute can reduce temperature of the product faster and maintain the temperature inside the cooler box for a longer timethan ice blocks. The methods used to prove the quality of tapioca ice substitue recomparison methods between the heat transfer rate and durability of ice blocks and tapioca ice substitute. The result of this experiment is tapioca ice substitutehas 68,6 % faster heat transfer rate and for the ability to maintain temperature inthe cooling box for a 16,68% longer period of time.
