This reserach aims to know the change on myoglobin content in Carp and Tilapia during preliminary handing for 48 hours in refrigenerator with temperature around 4 C. This is a laboratory research throgh observation method using spectrophometer with wavelengths of 540 nm and 503 nm. The results of reserach showed that in the third hour of observation there was an increased from 1.01 to 1.09 in Crap. The same change also occurres in Tilapia where in the sixth hour there was an increased from 1.01 to 1.10. This, resulted from the increas of oxygen binding bymyoglobin to be oxymyoglobin.
