Abstract
Background: Carbohydrate comsumption with high glycemic index (GI) and glycemic load increase the risk of type 2 diabetes mellitus. One way to reduse this risk is to consume foods wth low GI. Almonds is believed to decrease GI of a meal.
Objectives: This study aimed to know the effect of almonds on decreasing the value of carbohydrate’s glycemic index consumed by students of FKUAJ.
Methods: The study was an experimental with purposive sampling as sampling method. Subjects are 25 students of FKUAJ. Subjects will receive 5 different treatments, consume 50g of pure glucose, consume white bread containing 50g carbohydrate and white bread with addition of 60g, 90g or 120g almonds in the morning after an 8 hours overnight fast. Pure glucose served as standard meal and white bread served as control meal. Capillary blood samples were taken during 120min at 0, 15, 30, 45, 60, 90, 120. Glycemic index was calculated using the area under curve of blood glucose.
Result: White bread with 60g, 90g, 120g almonds decrease blood glucose compared to standard and control meal. White bread with almonds decreases GI compared to white bread without almonds in a dose-dependent manner for 60g (GI=88.5), 90g (GI=84.7), 120g (GI=75.1).
Conclusion: Consumption of almonds was able to decrease GI of consumed carbohydrate but doesn’t affect the categories of glycemic indices. Effective dose of almonds to decrease GI was 60g.
