Abstract
Background: Free radical is a molecule that contains an unpaired electron thus it could act as oxidants or reductants. This reactive molecule could damage deoxyribonucleic acid (DNA), protein, carbohydrate, and lipid which leads to some disease such cancer, cardiovascular disease, and diabetes mellitus. Damage caused by free radical could be suppressed by molecule known as antioxidant. There are 2 known source of antioxidant one is from body metabolism and the other is daily food consumption. Honey is food that contains antioxidant which could reduce damage caused by free radical.
Methods: This experimental research applies the use of cross-over method towards 20 subjects taken using consecutive sampling. Subjects are healthy volunteers between 25-55 years old that didn’t consume vitamin supplements, didn’t undergo any X-ray examination, and didn’t consume nuts (more than 77 grams) and fruits (more than 600 grams) 7 days in a row. Subjects are divided into 2 groups, therapy group (consumed 20 ml honey daily during 14 days before the experiment) and control group (consumed placebo during 14 days). Plasma MDA level is examined with spectrophotometry with wavelenght of 535 nm before and after consuming rubber tree honey.
Result: The reduction means value is 0,67 nmol/ml for therapy group and 0,12 nmol/ml for control group. Result of paired T between therapy group and control group test shows that there is a significant decrease in the plasma MDA after consuming rubber tree honey (p<0,05).
Conclusion: There is significant reduction in the plasma MDA level on healthy volunteers who consumed 20 ml rubber tree honey everyday for 14 days.
