Abstract
Introduction : Antioxidants can prevent damage caused by oxidative stress. Indonesians are interested in chia and quinoa seed because they have abundant benefits, especially antioxidant. The information about comparison in both seeds remain few and far between, the aim of this study was to determine antioxidant composition of both seeds.
Methods : In vitro experiment. The samples were chia seed and quinoa seed with a similar brand. Extraction method was using soxhlet with 40% and 80% ethanol. Phytochemical test especially flavonoids, tannins, triterpenoids, and saponins. The antioxidant activity was measured using spectrophotometer with DPPH method under 517 nm wave length. The results were analyzed statistically using One Way ANOVA method with post hoc test using Bonferroni method.
Results : Phytochemical test showed that chia seed contains flavonoids, steroids, and saponins. While quinoa seed contains flavonoids, triterpenoids, and saponins. The result of antioxidant activity measurement showed that chia seed extract in 40% of ethanol have 47.57% FRSA, and chia seed extract in 80% of ethanol have 60.38% FRSA. Quinoa seed extract in 40% of ethanol have 55.03% FRSA, and quinoa seed extract in 80% of ethanol have 66.28% FRSA.
Conclusion : Quinoa seed extract have greater antioxidant activity than chia seed.
