Abstract
Marco Padang is a company that moves on service industry. Queuing problems caused by insufficient capacity of toll booth service often occurs in grilling system which took the largest percentage of process ( ± 85 % ). In addition, the processing time of grilling system longer than other service systems in the show kitchen, so there service time take too long. The research is doing to get the service system which result the best performance system based on utility and time measurement using Promodel, and later the system will be the proposal system. The data is collecting with looking directly at show kitchen Marco Padang Restaurant Plaza Indonesia, from Monday to Friday at rush hour for 12 weeks. The analysis was performed by comparing the various models of service systems, with the setting menu on the grilling system based on time measurement. Based on observations, the authors propose two simulation proposal. The second proposal choosed as the best one, because the utility and more efficient. It can be used to the maximum in accordance with the entity which is less time to wait for processing. In addition to the simulation, this research conducted standard time for favourite grill menu, so that it can be standarization of services.
