Abstract
Introduction : Incidence of age-related chronic diseases in 2004-2014 increased. Consuming fruits and vegetables known to be beneficial in reducing and preventing the oxidative stress that triggers the onset of the disease due to the antioxidant compounds contained in it. One of the original fruit Indonesian believed health benefits are Salak Pondoh. A study said that skin and flesh Salak Pondoh have the potential as an antidiabetic. However, the antioxidant potential of skin and flesh Salak Pondoh have not been studied. Goal : This study aimed to compare the antioxidant capacity of the skin and flesh of Salak Pondoh
Methods: Experimental in vitro. Extraction method using repeated maceration with 50% ethanol, 75% and 100% for 7 x 24 hours. Phytochemicals test conducted on compounds tannins, flavonoids, terpenoids, and vitamin C. The antioxidant activity was measured using DPPH method with UV-Vis spectrophotometer at 517 nm.
Results: Extracts obtained viscous blackish brown. Phytochemical test obtained skin and flesh salak pondoh 50%, 75% and 100% contains flavonoids, terpenoids and vitamin c. In the skin salak pondoh also found tannin. Comparison of the antioxidant capacity of the skin and flesh salak pondoh at each concentration found no significant difference (p> 0.05).
Conclusion: Skin Salak Pondoh have greater antioxidant capacity than the flesh.
