Abstract
Background: Tests on food quality are important in order for us to know whether the food consumed is proper or not. Foodborne disease is disease that occurred as the result consuming food that contaminated with microorganisms or chemicals. Foodborne disease especially diarrhea is the main cause of mortality and morbidity for children. According to the World Health Organization in 2005, acute diarrhea in developing countries cause? the death of around 1.8 million childrenannually. Based on database at Indonesia Food and Drug Administration in 2008-2011, there are about 40-44% foods sold in elementary schools that are improper for consumption.
Method: According to the World Health Organization, Most Probable Number (MPN) is a bacteriological test to test the presence or absence of coliform bacteria. Testing the sample is conducted using MPN test with three dilution series and each series include five tubes. There are three tests must be done in MPN test i.e. presumptive test, confirmative test, and complete test. Total Plate Count (TPC) is another bacteriological test that is recommended by the American Public Health Association and US Food and Drug Administration as an indicator to test aerobic bacteria in food. The study was conducted at 3 elementary schools with 9 food samples sold by 8 different sellers and the sample used must be processed by the sellers and not from industrial production.
Result: Out of 9 samples which were tested, all gave positive results with the highest number of bacteria is more than 2400 cell/100 ml in gado—gado, ketoprak, nasi rames and the least as much as 7 cell/100 ml on gorengan in MPN test. The bacteria found was rod-shaped Gram - coliform bacteria For TPC test, all samples also gave positive results with the highest number of bacteria is average 287.5 colony on sixth dilution in gado—gado and on diird dilution in nasi rames and the least as much as average 12.5 colony on second dilution in gorengan.
Conclusion: None of the 9 samples of foods sold in front of the elementary schools in Pluit Village, North Jakarta is proper for consumption.
