Isi artikelThis research was aimed to study moisture sorption isothermic and shelf life of instant corn grits. The study showed that the instant corn had primary bound water of 5,8% ; secondary bound water of 13,66% and tertiary bound water of 36,11%. It was show that the shelf life of the product was 12,8 months.
