The Use Of Industrial Waste From Pt. Agrajaya Indotirta To Produce High Quality Drinking Vinegar Through Engineering A Multi Use Fermentor: The aim of this research was to find the optimum conditions for making vinegar from apple peel in collaboration with PT. Agrijaya Indotirta, Malang. The research was conducted in 2 stages. The first stage was carried out in a laboratory to find the best conditions for the fermentation and production of vinegar. And it was found that a pH factor of 4.5 with 5% inoculum gave the best results. And furthermore, that the most effective treatment for pasteurization was at 75°C for 5 minutes. In the second stage, industrial scale trial production was carried out using a multifunction fermentor. The second stage results showed that this new method gave higher acidic values, less sediment and a better colour than those obtained by using old methods.
